Silver based materials have strong antibacterial properties, but their potential toxicity issues cannot be underestimated. Therefore, it is urgent to construct a safe and non resistant dual antibacterial system.
On June 6, 2024, Food Hydroloids reported that researchers synthesized montmorillonite fixed AgNPs using tea polyphenols as reducing agents and montmorillonite as fixing agents( AgNPs@MMT ). Then, arginine was grafted onto the C2-NH2 group of the chitosan chain through N-acylation reaction to obtain arginine grafted chitosan (ACS), and finally AgNPs@MMT Prepare composite films by mixing ACS and gelatin G.
The results showed that the work successfully prepared AgNPs with a size of 6.72 ± 4.66nm and ACS with a grafting degree of 0.153, and verified the relationship between ACS and FIC index AgNPs@MMT The synergistic antibacterial effect of.
When ACS and AgNPs@MMT When the addition amount was reduced by 75% and 79.1% respectively, the antibacterial rate could still reach 99.9%. ACS/G/ AgNPs@MMT-2 Composite films have excellent mechanical properties, water vapor/UV barrier properties, antioxidant activity, degradation performance, and biosafety.
In addition, due to synergistic effects, ACS/G/ AgNPs@MMT-2 The antibacterial rates of the film reached 99.24 ± 0.19% and 99.49 ± 0.40%, respectively, and due to the slow release of silver (only about 11.27% of silver was released within 20 days), the film has excellent long-term antibacterial performance.

Finally, ACS/G/ AgNPs@MMT-2 Thin films can significantly improve the freshness of food and can be used as new antibacterial packaging materials.
